Our Story

Born from a love of chocolate

ALOUSS was born out of my passion and love for Chocolate. Although I come from a Psychology background and I always had a passion for counselling people, in 2016 after having my first child I decided to pursue my other passion… Chocolate making.

When I began delving into the world of chocolate making it became very clear to me that I had to make chocolate from the cocoa bean…the authentic way. It has been an exciting and adventurous journey full of opportunities and challenges and my passion and love for turning my dream into reality has kept driving me.

The flavour combinations of our Chocolate bars are inspired by my family and my childhood memories and each bar has been dedicated to a family member who inspired me. The ongoing love and support of my husband and family has ultimately been the foundation on which this company was built.

Since I was a child my family and those that know me really well have affectionately referred to me as Alouss, and so ALOUSS was born as it represents the heart of my brand.

I hope you enjoy my chocolate as much as I do.Elsie, Founder & Chocolate Maker

From the Tree

Where chocolate begins

Long before it becomes a bar, chocolate is fruit. Cacao — the "food of the gods" — has been cultivated in the tropics since around 900 BC. Every step from pod to bean shapes the flavour you taste, which is why we care about where ours comes from.

  1. The Cocoa Tree

Cacao grows in a narrow band near the equator, its flowers pollinated into pods that ripen right on the trunk and branches.

  2. Harvesting

Ripe pods are cut by hand to protect the delicate tree — careful work that keeps it fruiting for years to come.

  3. Fermentation

The beans and pulp are fermented for days. Without fermentation, the beans would never taste like chocolate.

  4. Drying

Slow drying locks in flavour and readies the beans for roasting — the first step we take in our own studio.

Bean to Bar

How it's made

Real chocolate-making is slow, deliberate work. Here's the journey from raw bean to finished bar.

We're chocolate makers — not chocolatiers.

A chocolatier buys ready-made couverture and shapes it. We start with the raw bean and make the chocolate itself — roasting, cracking, winnowing and grinding in small batches, with no shortcuts. It's slower, and it's the only way we know how.

01

Sourcing

We start with single-estate Australian cocoa, grown with care and traceable to its origin.

02

Roasting

Beans are roasted in small batches to coax out each estate's distinct character.

03

Cracking & Winnowing

We crack the roasted beans and separate the husk, leaving pure cocoa nibs.

04

Grinding & Conching

Nibs are stone-ground and conched for days until silky-smooth.

05

Tempering

Careful tempering gives our bars their signature snap and glossy finish.

06

Moulding & Wrapping

Each bar is hand-moulded, set, and wrapped — ready to share.

Good to know

Questions, answered

What does bean-to-bar mean?

It means we make the chocolate ourselves from the raw cocoa bean, roasting, cracking, winnowing and grinding it in small batches, instead of melting down ready-made chocolate. Chocolatiers shape chocolate that someone else has made; chocolate makers like us make the chocolate itself.

Where is Alouss based?

Alouss is an online chocolate business based in south-west Sydney, near Camden in NSW. Every order is made in small batches and shipped from there, Australia-wide.

Where does your cocoa come from?

Our bars are made from Australian cocoa beans grown in North Queensland on a family-owned plantation, then roasted, cracked, winnowed, ground and conched into chocolate by Elsie in small batches.

Do you make vegan or dairy-free chocolate?

Yes. All three of our dark chocolate bars (Australian Dark 70%, Raspberry Dark 70% and Halva Dark 70%) are vegan and dairy free, and our Vegan Coconut Milk 45% bar is a vegan 'milk' chocolate made creamy with coconut, with no dairy ingredients. We also make milk chocolate in the same studio, and even though we wipe everything down between batches, we can't completely rule out traces of milk, so please check the allergen line on each pack (the coconut pack says may contain traces of milk and nuts, and Halva contains sesame). Email info@alouss.com with any dietary question.

Which flavours do you make?

Our range is Australian Dark 70%, Raspberry Dark 70% and Halva Dark 70% (all vegan and dairy free), Australian Milk 45%, Caramel Almond Milk 37%, Coffee & Cardamom Milk 37% and Vegan Coconut Milk 45%, plus gift packs of 4, 6 and 8 bars.

Do you ship Australia-wide and how much is delivery?

Yes. We deliver Australia-wide by express post for a flat rate of $18. We do not ship on Friday, Saturday or Sunday; orders received then are processed on Monday. In summer we pack orders in insulated foil bubble wrap and hold them on very hot days.

What if my chocolate arrives melted or damaged?

Chocolate doesn't love the heat, so we pack every order in insulated foil bubble wrap, send only from Monday to Thursday so parcels never sit in a depot over the weekend, and hold orders on very hot days. If your order arrives melted, damaged or wrong, email info@alouss.com within 24 hours of it arriving, with a photo, and we'll make it right.

Can I return my order or get a refund?

Because our chocolate is food, we can't accept change-of-mind returns. If something is wrong with your order, we'll make it right, and refunds go back to the card you paid with, usually within 5 to 10 business days. The full details are on our Returns and refunds page (alouss.com/returns).

Do you sell wholesale to cafés and shops?

Yes. We supply cafés, providores and fine-food retailers. Get in touch at info@alouss.com to talk about stocking Alouss.

Do you make gift packs?

Yes. The Starter Pack has 4 bars, Indulge Your Senses has 6 and Ultimate Indulgence has 8.
